CHILLY MILLY CURRY

Are you a lover of spicy Punjabi Food like me?? Well if you are ... this Chilly Milli curry is the way to go . Its a very simple dish filled with veggies and cottage cheese along with burst of flavors and is best served with home cooked Naan 🌶.

INGREDIENTS :

· Oil

· Ghee

· 1tsp Jeera / Cumin seeds

· 1-2 Bay leaf

· 1 Cinnamon Stick

· 3-4 Cloves

· 3-4 Green cardamom/ Elaiche

· Black Pepper – full or powder

· 2-3 onions

· 1-inch ginger

· 6-7 garlic cloves

· 2-4 Green chilies (Add according to the spice level you like)

· 10 cashews

· 5-6 Tomatoes

· 4-5 Kashmiri red chilies

· Cut Ginger in fine Julienne – Vertical long strips

· Green Chillies in fine Julienne – Vertical long strips

· Capsicum in fine Julienne – Vertical long strips

· Cabbage in fine Julienne – Vertical long strips

· French beans in fine Julienne – Vertical long strips

· 1 tsp red chilly powder

· 1tsp coriander powder

· 1 tsp garam masala

· 2 tsp fresh cream

· Coriander leaves

· Kasturi methi

· 150 grams panner

DIRECTIONS:

• In a pan add some oil and saute cumin seeds (jeera), bay leaf, Cinnamon stick, cloves, green cardamom, and black Pepper

• Add onions, green chilies, ginger, garlic, tomatoes, cashews and Kashmiri red chiles to the pan and let it cook for 4-5 mins

• Add little water to the pan and let it cook for 8 – 10 mins

• Once the mixture is cooled down, add it to the blender and make a smooth paste

• In hot oil and ghee in add ginger, green chilies along with paneer & veggies, once sauteed add red chilly powder, coriander powder and garam masala to the mixture and cook for 4 – 5 mins

• Add the blended paste to the veggies and add little water for consistency

• The last step would be to add little heavy cream, Kasturi methi and garnish it with coriander leaves

FOR JAIN GRAVY:

· In a pan add oil with little ghee, add cumin seeds, coriander seeds, bay leaf, cinnamon stick, green cardamom, black pepper

· Add 6-7 Kashmiri red chilies, 2-4 green chilies, 5-6 tomatoes along with 10-12 cashews and ginger powder and blend it in a smooth paste
