This healthy salad recipes are perfect for anyone looking to add a little more nutrition to their diet!


There is always a delicious way twist you can add to healthy food options you opt to eat!! Today for lunch I made this fresh salad, loaded with veggies, croutons, black beans and tofu .... what’s better than a bowl full of healthiness, filled with fiber & proteins.


Honestly if you ask me salads can be a creativity of your own!! Just add what you have at hand or all veggies and proteins you like and toss them in a favorite dressing of yours.





INGREDIENTS:

· Lettuce

· Carrot

· Purple cabbage

· Cherry Tomatoes

· Olives

· Bell Peppers

· Croutons

· Black Beans

· Tofu OR Cottage cheese

· Cilantro

· American Corn

FOR DRESSING:

· Olive Oil

· Dijon Mustard

· Fresh Squeezed Lemon Juice

· Black pepper

· Mayonnaise or Yogurt

· Salt

DIRECTIONS:

· In a bowl add olive oil, mustard and mayonnaise, salt, black pepper and fresh lemon juice and whisk it till everything comes together, giving it a creamy texture

· Add the dressing to the veggies and add croutons to it, mix It well and enjoy the healthy and delicious salad
