Vada Pav or Pav Vada is the staple food for many Mumbaikars. You will find shops selling Vada pav all over Mumbai and even outside schools and colleges. It easy to make and serve.
Mumbai Vada Pav !!! Vada Pav is Mumbai’s most relished street food ! It’s what we call Indian Burger. the snack made my sandwiching the vada made with potatoes between the bun smeared with sweet & spicy chutney.
This recipe is my favorite and comes together quickly and most importantly belongs to the city I come My personal favorite is the one you get outside Mithibai College.

How to make Green Chutney:
The green chutney is an integral part of so many Indian dishes. It’s one chutney which I always have in my refrigerator.
For making this refreshing green chutney you need the following:
· In a blender add cilantro, chilies, whole cumin seeds, ginger, salt and lime juice
· I like my chutney to be thick so I add some papdi ganthiya or any type of ganthiya which is available or the replacement for this would be some peanuts its totally up to you how you like your chutney and have available at your hand
How to make Tamarind Chutney:
Tamarind chutney is traditionally made by soaking the tamarind in water and then cooking the pulp with spices and water
· I didn’t have tamarind at hand, so I used apple butter to which I add some salt, roasted cumin powder and red chili powder and mix it and cook in the microwave for around 2 mins
Ps: I have used ready-made Vada pav chutney that I got from Mumbai (It’s easily available in any Indian Grocery Store)
How to make the Vada:
· Boil the potatoes until soft, peel them and set them aside
· Crush the ginger, garlic and green chili
· Heat 1 tablespoon oil in pan, once it’s hot, add hing along with mustard seeds and let them pop
· To it add curry leaves and crushed garlic, ginger and green chilies mix it it all comes together
· Add little salt, turmeric powder to the mixer and add the boiled potatoes and mash it
· Let the mixer cool for about 10 mins and roll the mixer in circular balls
How to make the batter:
· To make the batter, take besan in a large bowl. Add turmeric, salt and pinch of baking soda to it
Fry the Vada:
· Heat oil in a wok on medium-high heat. Dip each potato round into the batter, coat it from all sides
· Then drop it into the hot oil. Fry the vada in hot oil until golden brown in color. Drain on a paper towel
How to Assemble it:
· Apply butter on both side of the pav / bread
Apply green chutney & tamarind chutney to the pav add some dry garlic chutney and place the fried vada in center and close the pav..
