Khow Suey Soup to start your Monday off the right foot !! The sweet and tangy flavors come together within an hour ... it’s a healthy and is filled with veggies .. hope you guys like the colorful dish !! 🍜
SERVES: 4
INGREDIENTS:
· 2 medium sized onions
· 4-5 cloves Garlic
· 1 -2 inches ginger
· 1 tsp turmeric powder
· 2 tsp red chilly powder
· 1/2 cup Broccoli
· 1/2 cup French Brans
· 1/2 cup water chestnuts
· 1/2 cup Baby Corn
· 1/2 Bell peppers
· 1/4 cup Zucchini
· Basil Leaves
· 600 ml Coconut Milk
· Gram Flour / Besan
· Water
· Fried noodles
· Boiled noodles
· Coriander / Cilantro
· Peanuts cut
· Cut lemon
· Oil
· Salt
PS: You can add the veggies of your choice
DIRECTIONS:
· In a blender add onion, garlic, ginger, turmeric powder, chilly powder and 1 tsp oil and blend it until you get a smooth paste
· Heat the oil in the pan, add the blended paste to it and cook it for 4-5 mins
· Add the veggies and basil to the mixture in the pan and sauté it for 3-4 mins and add coconut milk to the pan and bring it to boil
· In a bowl take gram flour or besan, add water to it and mix it well once mixed, pass the mixture of gram flour and water through strainer and let the curry cook for 5 mins
· In another pan heat the water and boil the noodles (add oil and salt)
PRESENTATION:
· In a bowl add some boiled noodles
· Pour the Khow Suey Soup over it
· Add some fried noodles
· Some peanuts
· Chopped Cliantro
· Chopped Basil Leaves
· If you like onions, you can add thin slices of onions along with caramelized onions
TIPS:
Crispy Noodles: 1 packet Noodles, take a pot with hot water, soak the noodles in it, boil for 10-15 minutes. After 15 minutes drain it very well, take one kitchen towel and spread the noodles on it , keep it dry for 15-20 minutes.- after they dry, you can then fry it, keep it on paper towel, when cool store it an airtight container. Your crispy noodles are ready. You can use the noodles in Khow Suey, Chinese bhel, Manchow soup etc.
For Caramelized Onions: In a pan add some oil, cut onions in thin strips and segregate them, once the oil is heated add the onions in the hot oil and let it cook for 5-6 mins. Once they start turning light brown turn the burner to low flame or low heat and let it cook till they turn nice golden brown. You can then strain oil and lay the crispy onions in the kitchen towel so that it soaks the excess oil (after 1 hour) you can put them in air tight container and store it for a few days.
Paste for JAIN KHOW SUEY Paste:
· 10 dry Kashmiri red chillies or 5 Kashmiri chillies (soaked in warm water for 20 minutes)
· 1 tbsp chopped coriander
· 1 Yellow Bell Pepper
· 1 tsp turmeric powder
· 1/3 cup chopped lemon grass stick
· 1 tsp lemon zest or peeled skin of lemon
· 1/2 tsp dry ginger powder
· 1 tbsp cumin seeds
· 3-4 kaffir lime leaves
· Black pepper
· Salt to taste
· mix all the ingredients and grind to paste
