These Avocado Cucumber Sushi Rolls takes less than 10- 15 minutes to come together, are loaded with nutrients, are low in carbs, this is a hit item for people who are allergic to a lot of products, trust me its super delicious.

2 English Cucumbers
1/4 Cup Cilantro
1/4 tsp Cayenne Pepper ( You can replace it with Paprika if you don't have Cayenne Pepper)
1/4 tsp Black Pepper, add more if needed
1/4 tsp Cumin Powder, add more if needed
1/4 cup finely chopped Jalapeños
Salt to taste
1 tablespoon Lime Juice
For Garnishing:
Powder,plusSour cream
Parsley
Sliced Black Olives
Directions:
To prepare the Cucumber slices, use a wide vegetable peeler and slice the cucumber lengthways into long slices on one side of the cucumber (until you get to the seeds), Discard the outer layers. Set aside.
In a bowl, mash the avocado, add lime juice, salt, cumin powder,cayenne pepper, black pepper, jalapeño and cilantro together and mix everything well.
To assemble, spread the mixture with a spoon onto each cucumber strip, and gently roll up until you have a finished round roll. You can use toothpick to secure them.
Place these rolls onto a plate, and garnish them with sour cream and sliced black olives and some with parsley.
Enjoy these delicious rolls.
