Avocado Cucumber Sushi Rolls

This avocado cucumber sushi roll is one of our favorite recipes. It’s one of those perfect detox dishes that ticks all the boxes: hydrating and detoxifying, rich, creamy, and satisfying. Don’t stress about getting your cucumber strips perfect.


These Avocado Cucumber Sushi Rolls takes less than 10- 15 minutes to come together, are loaded with nutrients, are low in carbs, this is a hit item for people who are allergic to a lot of products, trust me its super delicious.


You can also make this with Zucchini.

INGREDIENTS:

  • 2 English Cucumbers

  • 1/4 Cup Cilantro

  • 1/4 tsp Cayenne Pepper ( You can replace it with Paprika if you don't have Cayenne Pepper)

  • 1/4 tsp Black Pepper, add more if needed

  • 1/4 tsp Cumin Powder, add more if needed

  • 1/4 cup finely chopped Jalapeños

  • Salt to taste

  • 1 tablespoon Lime Juice

For Garnishing:

  • Powder,plusSour cream

  • Parsley

  • Sliced Black Olives

Directions:

  1. To prepare the Cucumber slices, use a wide vegetable peeler and slice the cucumber lengthways into long slices on one side of the cucumber (until you get to the seeds), Discard the outer layers. Set aside.

  2. In a bowl, mash the avocado, add lime juice, salt, cumin powder,cayenne pepper, black pepper, jalapeño and cilantro together and mix everything well.

  3. To assemble, spread the mixture with a spoon onto each cucumber strip, and gently roll up until you have a finished round roll. You can use toothpick to secure them.

  4. Place these rolls onto a plate, and garnish them with sour cream and sliced black olives and some with parsley.

  5. Enjoy these delicious rolls.
