SUMMERS ARE INCOMPLETE WITHOUT MANGO DESSERT

NO BAKE MANGO CHEESECAKE CUPS


We say Summers are for Mangoes !! Here is the fresh creamy no bake mango cheesecake in cups perfect for this weekend!!


SERVES: 5 CUPS

Ingredients:

· 200 gms of Graham Crackers/ Biscuits

· 2 – 3 tsp of Butter, Melted

· 10g Agar Agar powder

· 50 ml cold water

· Mango pulp

· 300 gms sweetened condense milk

· 2 cups Cream Cheese

· 1 teaspoon of lime / lemon zest

· 1 teaspoon Vanilla Extract

· 160 ml Heavy Whipping Cream

· Cups – you can be as creative as you want 

Directions:

Step 1: Base Crust / Biscuit Base

· In a blender add the Graham Crackers/ Biscuits, crush it into fine crumbs

· Add the melted butter to the powdered mixture and pulse it until it’s comined

· Now, add the Graham craker base into the cup and press it to the bottom thick enough

· Refrigerate the base crust while you make the filling

Step 2: Cheesecake filling

· Take the Agar – Agar powder and add 50 ml water and let it bloom

· In the blender add the mangoes or mango pulp along with sweetened condense milk and blend it till its smooth

· Remove it in a container and add lemon zest, cream cheese along with vanilla extract and beat until its smooth

· Take the cold heavy cream and whip it until you get stiff peaks

· Now fold the stiff whipped cream to the mixture

· Melt the agar agar in the microwave 15 seconds and add it to the mixture and mix it well

· Pour the mixture into the cup, spread evenly and refrigerate it for 6-7 hours

STEP 3: ICING

· You can use whipping cream (where in you can add sugar to the whipping cream and beat it till you get stiff peaks)

· You can always decorate in your style. However, to get the same look you can use piping bag fill the cup with swirls

· You can add some diced mango pieces or mango pulp over the cream

TIPS:

· If you don’t have the electric had beater or you can use your blender most of the blenders have a whip option, it’s the easiest way and its ready in a few mins

· If you don’t have agar agar powder, you can activate the corn starch by adding cold water and making it a slimy paste and mix it with the cheesecake filling
