INGREDIENTS:
Cream cheese softened
1 tsp mayonnaise
1 teaspoon dried dill
(8-inch) flour tortillas- (You can use tortillas of your choice spinach/ tomato)
Olives
Fresh Jalapenos
Finely chopped bell peppers (Red, yellow, Green)
Celery finely chopped
1 cup shredded cheddar cheese
DIRECTIONS:
Add cream cheese, mayonnaise, dried dill, finely chopped jalapenos, olives, bell peppers and celery to a mixing bowl and mix thoroughly to combine
Spread filling into an even layer on tortillas all the way to the edge
Tightly roll up tortillas from one end to another
Once rolled up, squeeze gently to compact everything and lay seam-side down for slicing
Use a knife to gently cut tortillas
PS: There are various ways you can make this, you can add different cheeses, add onions, pickles, cilantro, cucumber, and so on. However, you can also make Mediterranean pinwheels with hummus, cucumber, olives. It’s just a quick and easy appetizer that comes together with the ingredients that you have in the refrigerator.
Indian houses have extra roti’s at home sometimes. You can also use that instead of tortillas
Tip: You can freeze the rolls and then cut, or you can cut and then freeze
